Green pea and leek soup

Quick and easy to prepare, this green pea and leek soup is packed with natural flavours.

Green peas are rich in protein and fibre, hence their filling characteristic. As a matter of fact, many of the vegan protein powders are made of pea protein. (More information about green peas here.)

Leeks, on the other hand, are low in sodium and cholesterol and are also a source of dietary fibre, among others. (More information about leek here.)

Indulge in this creamy delight to feed your body and warm up your soul.

 Eat it to complement your lunch or as an early night snack.

 (Remember to wait at least two hours between your last meal of the day and going to bed.)

Ingredients

  • 1 medium size onion
  • 4 Garlic Cloves
  • 1 tbs Olive Oil
  • 1/2 teaspoon of Sea Salt
  • Green peas, frozen or fresh – (1 soup bowl)
  •  Leek, frozen or fresh (1 soup bowl) – 1 medium leek, if fresh
  • Oregano
  • Ground pepper

PREPARATION 

 

  • Start by boiling water in a kettle to make the process quicker.
  • Peel, chop and place in medium size pan the onion and garlic.
  • Add to pan 1 measure of green peas and 1 measure of leek.
  • Then add salt and olive oil.
  • Pour the boiled water into the pan, in order to just cover the content.
  • Bring to boil and then lower heat to simmer during 15 minutes or until peas and leek are soft.
  • Blend the mix until uniform and creamy.
  • Serve in individual bowls, add the flex seed, and mix.
  • Sprinkle with oregano and pepper.
