RADISH AND POTATO STIR FRY

This mouth watering vegan radish and potato stir fry topped with Shitake Chutney is super easy and quick to make.

In the past, this would have been a recipe I would have frown upon, as I am not a big fan of radishes or potatoes. 

Radishes were just something I bared to eat when it was included in a salad ordered at a restaurant or offered in someone’s house.

But now that I am growing my own vegetables my outlook on radishes, and even potatoes, has changed.

I stopped underestimating these spicy red veggies after discovering that they are the easiest vegetable to grow at home. They grow very quickly in a veggie bed in your garden or even in a vase, hence making it great for newbie gardeners. (I tried both and both worked well.)

When I started planting radishes I didn’t think much about what to do after harvesting so many of them.

A few weeks later, with more radishes than I could possibly eat, I went looking for solutions.

After a quick research and inquiry to Faith Canter, a master at fermenting and pickling food, I ended up with a few options. I even found ways to use the radish greens

Inspired by a BBC Good Food roasted radish recipe, I decided to create my signature stir-fried version.

Ingredients

  • Radishes
  • New potatoes
  • Garlic
  • Olive oil
  • Rosemery
  • Salt
  • Pepper

PREPARATION

  • Slice radishes and new potatoes in halves or quarters, making sure they are all of a similar size.
  • In a pan, boil radishes and potatoes with a teaspoon of Himalayan or sea salt. ( Radishes will float when ready. Scoop and reserve them.)
  • On a frying pan, add a drizzle of extra virgin olive oil and 3 to 4 garlic cloves. 
  • When the garlic starts to take on a golden colour, add the radishes and potatoes.
  • Now, this step is up to taste. I like it slightly golden, so I stir fry until the garlic is crispy golden and potatoes are slightly golden.
  • At last, add rosemary to taste.
  • In this case, to give this dish an extra touch, I added a tablespoon of TerriuS.pt Shitake Mushroom Chutney.
  • Serve and enjoy!
