Banana, strawberry and date salad

This fruit salad combines some of my favourite ingredients: banana, strawberry and dates.

We have been working very hard at our garden trying to figure out how everything works (at this point, we just moved in).

While James is trying to decipher the complexities of our irrigation system for the two orchards and two grass areas, I go around getting rid of the weed that is quickly taking over.

The whole gardening ordeal can be hard physical work and some days we just feel like we need that extra energy to keep us going.

The day I came up with this banana, strawberry and date salad recipe was one of those days. We were totally depleted of energy and desperately needing a boost.

TIME  Under 15 minutes
DIFFICULTY  Super Easy
NECESSARY MATERIAL Fruit knife
Ingredients

  • 1 Large banana
  • 6 large strawberries
  • Coconut cream

TOPPING

  • Grated Dark chocolate
  • Lemon zest
  • Mint leaves

PREPARATION

  • Slice 1 large banana and 6 large strawberries, dividing into separate individual bowls.
  • Add coconut cream (to taste) to each bowl.
  • On each bowl, slice two dates.

TOPPING

  • Grated dark chocolate ( I use a minimum 70% and always vegan)
  • Lemon zest (grated lemon peel)
