Indulge in this Mixed Berries Chia Pudding Delight covered in delicious coconut cream and topped with dark chocolate.

Packed with omega-3 fatty acids, fibre, antioxidants, iron, and calcium, this easy to make snack will refresh you in warm days.

TOPPING

PREPARATION

WITH BLENDER
  • Put inside the blender cup all the ingredients mentioned above, starting with the liquids (water and almond milk)
  • Blend on and off for 5 minutes
  • Place mix in a bowl and take to the fridge for a minimum of 4 hours (better if overnight)
BY HAND
  • Defrost the berries and smash them well until smooth.
  • Place smashed berries in a bowl with the rest of the ingredients and mix until homogeneous. You will notice that the chia will create lumps. That’s ok. As you continue to mix, preferably with a fork, it will become homogeneous.
  • For the next 15 minutes to half hour, mix every 5 to 10 minutes then place the bowl in the fridge for a minimum of 4 hours (better if overnight)
Be aware that your final result will be chunkier, and not as smooth as the blended version, but it will be just as delicious!

TOPPING

  • Put one tablespoon of coconut cream on top of the individually served chia pudding
  • Sprinkle the pudding with grated dark chocolate
If you would like a more intense flavour, substitute the 2 cups of water by 2 cups of almond milk (or the type of milk you chose to use).
You can also put some fruit, nuts or dates on the top, as on the second photo on this page. One chopped date gives it a bit of extra sweetness to counterbalance the acidity of the berries.

 

Be gentle with the servings as chia pudding is very filling! 🙂
