Indulge in this Mixed Berries Chia Pudding Delight covered in delicious coconut cream and topped with dark chocolate.
Packed with omega-3 fatty acids, fibre, antioxidants, iron, and calcium, this easy to make snack will refresh you in warm days.

Ingredients

1 Cup of organic Chia seeds

1 Cup of fresh or frozen mixed berries

1 Cup of Almond milk
-
2 Cups of Water
-
1 Tbs of Organic Maple Syrup

Grated dark Chocolate or Medjool dates.
PREPARATION

Put inside the blender cup all the ingredients mentioned above, starting with the liquids (water and almond milk)

Blend on and off for 5 minutes

Place mix in a bowl and take to the fridge for a minimum of 4 hours (better if overnight)

Defrost the berries and smash them well until smooth.

Place smashed berries in a bowl with the rest of the ingredients and mix until homogeneous. You will notice that the chia will create lumps. That’s ok. As you continue to mix, preferably with a fork, it will become homogeneous.

For the next 15 minutes to half hour, mix every 5 to 10 minutes then place the bowl in the fridge for a minimum of 4 hours (better if overnight)
TOPPING

Put one tablespoon of coconut cream on top of the individually served chia pudding

Sprinkle the pudding with grated dark chocolate
Be gentle with the servings as chia pudding is very filling! 🙂
